Dinner Plan / Sa-Kaiseki (Sauna Kaiseki).

After restoring your body and mind in the sauna, we invite you to experience a unique dinner course: Sa-Kaiseki (Sauna Kaiseki).

Kaiseki, originally derived from the Japanese tea ceremony, is a refined and highly aesthetic form of dining. In Kyoto, this tradition evolved into Kyo-ryori (Kyoto cuisine), celebrated for its delicate flavors, seasonal sensitivity, and artistic presentation that reflects the spirit of Japanese aesthetics.

At 6ishiki, we have reimagined this heritage by weaving it together with the meditative roots of sauna culture, which itself evolved from Buddhist bath practices. The result is Sa-Kaiseki—a dialogue between body, spirit, and tradition.

The dishes are created in collaboration with Tamagawarō, a historic local restaurant in Kameoka with over 130 years of culinary history. Their craft brings forward the refined depth of Kyoto cuisine while honoring the natural flavors of the region. Each course is delicately seasoned, centered around a clear kombu dashi broth, and composed with seasonal ingredients sourced from local farms.

Through this dinner, you are invited to taste not only nourishment for the body, but also an expression of time, place, and the quiet beauty of Japan’s four seasons.
